This Quick and Healthy Sausage Soup recipe was inspired by our member Deanne.  I have a family of five to feed and it’s my favourite go to. This Turkey Soup is easy, inexpensive and goes a long way.   It would also be delicious as a vegetable based soup without the meat. You could substitute for Tofu.  You cannot out train a bad diet but here’s a great workout if you need one.

Turkey Sausage Soup 

Ingredients:

  • 4 Turkey sausages or any meat sausage of your choice *remove the skin
  • 4 chopped carrots
  • 1 chopped onion of your choice *I use sweet onions
  • 5  chopped celery sticks *I didn’t use celery 🙂
  • 4 small cloves of garlic minced or crushed
  • Salt and pepper to taste
  • 2 cans of diced Tomato or no added sugar pasta sauce
  • 2 cans of beans of choice
  • 1 cup of chicken broth
  • 4 cups of boiling water
  • 1 large handful of spinach *chop it up or cut with scissors so it’s sneaky inside 🙂  It gives a beautiful colour
  • Experiment with other veggies like broccoli, Kale, cauliflower, non GMO corn, etc.

How to Cook Turkey Sausage Soup:  

3 minute Sauté

  • Add 4 sausages to a pot and sauté for  approximately 3 minutes *remove & discard skin, add meat to a pot and chop into bite size pieces as it’s cooking, then add:
  • 4 chopped carrots
  • 1 chopped onion
  • 5 chopped celery sticks
  • 4 small cloves of garlic minced or crushed
  • Salt and pepper to taste

Set a timer for 7 minutes

  • Stir the veggies and sausage to let the flavours mix and the veggies get a little tender
  • Continue breaking up the sausage into bite size pieces

After 7 minutes, add: 

  • 3 cups of no added sugar pasta sauce  *I use the Victoria White Linen Collection from Costco OR:  2 cans of diced Tomatoes (both work well so use whatever is on hand).
  • I blend my diced Tomatoes in my Vitamix to avoid chunks for the picky eaters in my house
  • 2 cans of beans of your choice *I use black beans – use other veggies if avoiding beans
  • Add spinach
  • 1 cup of chicken broth
  • 4 cups of boiling water
  • Oregano and salt and pepper to taste
  • Bring to a boil reduce heat and simmer for 30 min
  • Enjoy this incredibly tasty Turkey Sausage Soup
