Dinner time came and I realized that I forgot to grocery shop today. In a panick, I decided to pull together all of the ingredients in my fridge. Sound familiar? Rather than opt for take out I created a power protein dinner that was quick and easy.


1 can of Organic Kidney Beans (14oz or more)

1 can of Organic Black Beans (14oz or more)

2 cooking onions (sweet onions would be even better)

¼ jar of All Natural Spaghetti Sauce (I use White Linen Marinara sauce from Costco with no additives). Be sure there is no added sugar.

2 tsp of Coconut Oil (for fat)

Bunches of Organic Raw Spinach (bonus: the spinach was too wilted for a salad, even though it was still fresh). I threw in all of it.

Pepper to taste.


Fry the onions until golden brown. Add the Coconut Oil, Beans and sauce, warm it up. Add the sauce and voila!

Normally I would serve this over top of Quinoa but I ran out. I used Brown Rice instead. It was delicious and quick.  Let me know if you like it. Enjoy.
