Meatless Mushroom Pho Soup sounds fancy and tastes amazing. This Mushroom soup was part of my post brain surgery recovery meal plan because it’s detoxifying, anti-inflammatory and full of nutrients. Meatless meals are a good way to reduce meat intake which helps reduce inflammation in the body and saves money on your grocery bills. Here are few Meat Free Meals and Protein Alternative recipes for more meatless meal ideas.
Meatless Mushroom Pho Soup Recipe
“Portobello mushrooms are a great substitute for “meat” in many dishes. They are hearty, have a great texture and give off great flavour. This soup is nice and light and great anytime. Just a few pantry staples, some fresh ginger and garlic and you can make this easy soup.”
Ingredients:
- 4 Portobello mushrooms sliced length wise
- 2 tablespoons of miso paste
- 3 tablespoons tamari
- 2 teaspoonS sesame oil
- 4 cloves of garlic minced
- One inch piece of fresh ginger minced
- 1 teaspoon coconut sugar
- 1 tablespoon sesame seeds
- 2 cups of water or low sodium vegetable broth
- Cooked rice noodles *I use gluten free
- Chili flakes for spice (optional)
- Fresh vegetables of choice (green onion, cilantro, red cabbage, spinach, sprouts etc.)
Meatless Mushroom Pho Soup Recipe
How to Make:
- In a pot heat sesame oil and add mushrooms
- Sauté for a few minutes until browning happens and add ginger, garlic, tamari, coconut sugar, miso and sesame seeds
- Sauté for a couple minutes more then add water or vegetable stock
- Simmer on low for 10 minutes and cook your rice noodle according to package directions
- Ladle your broth and mushrooms into a bowl
- Add in your noodles and garnish with toppings and vegetables of choice

- Inexpensive and a great replacement for meat
- High in vitamin B2 & B3
- Low in carbs but really flavourful
- Good source of amino acids which are essential building blocks for our body
- Low in calories, tasty and filling
