Mac and Cheese Dairy and Gluten Free. My kids had no idea it was a vegan Mac and Cheese and my teenager loved it. This is a great alternative for anyone who is limiting dairy. This Mac and Cheese is surprisingly filling because of the protein source in the chickpea pasta. Goodbye Kraft Dinner, hello healthy version. You can use any type of pasta. Vegan Mac and “Cheese”
“We swear your kids won’t even know. This vegan and gluten free mac and “cheese” is so good. The base of the sauce is veggies and has no butter. Here we used chickpea pasta which is an amazing source of protein and it is gluten free too.”
Vegan Mac and “Cheese” Recipe
Ingredients:
- 2 tbsp olive oil
- 1 onion chopped
- 2 cloves of garlic minced
- 1 carrot chopped
- 1 potato chopped
- 1/2 tsp turmeric
- 2-3 tbsp nutritional yeast (adds a delicious cheesy flavour)
- 1/2 tsp garlic powder
- 1/2 tsp sea salt
- pinch of cayenne
- black pepper to taste
- 1 tsp tamari
- 1/2 cup of vegetable stock or water
- 1/2 cup of almond/oat or cashew milk (unsweetened, plain)
- *optional 1/2 cup cashews to make it extra creamy (above recipe did not use this)
- 1 package of chickpea pasta or pasta of your choice
How to Make:
- Steam your carrots and potatoes until tender (and cashews if using, this makes them soft so they blend better)
- Add to your blender
- Sauté the onion and garlic in oil until translucent
- Add in all your spices, vegetable stock, Tamari, nutritional yeast and your milk of choice
- Transfer to your blender with the carrots, potatoes and cashews and purée until very smooth
- Boil pasta according to package directions, strain and add your sauce
- Mix well and adjust seasonings to taste
- Enjoy!
