Chocolate Protein Muffins Flourless

You can find these on page 161 of my book Trina’s Kitchen: Healthy Food Made Easy. These are school safe, super moist and delicious and can be large or mini muffins.

Ingredients: 12 muffins

  • 1x 398 ml can unsalted black beans
  • 5 eggs
  • 1 tbsp vanilla extract
  • ¼ tsp salt
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tbsp coconut oil, melted on the stove top or liquid
  • ¼ cup maple syrup
  • 2 tbsp cocoa powder
  • 1 tsp cinnamon
  • Optional: ¼ cup chocolate plant protein powder 
  • *optional make sure it’s chemical free, this is what to look for in a Protein Powder

How to Make:

  1. Preheat oven to 375
  2. Spray or rub muffin tin with a bit of oil or use silicone muffin cups to avoid oil
  3. Drain and rinse beans
  4. Place all ingredients in a blender or food processor, blend until thin and smooth *use a spatula to scrape the batter out
  5. Fill each muffin cup to about ½ full
  6. Bake for 20-25 minutes until a toothpick inserts into the centre of the muffin and comes out clean
  7. Let them cool before serving
