Everything Free Cupcakes!  This is a way back recipe that was served at one of our Pelvic Floor Seminars from our Members.   The great news is these healthy cupcakes are gluten-free, oil-free, nut-free, soy-free & sugar-free chocolate cupcakes!  These soft, moist, delicious treats are just what you need when that chocolate craving hits.  Helping you take the guilt out of cheat meals one recipe at a time.  Check out the Member tested recipe below.  Guaranteed to be husband and kid approved!

Chocolate Cupcakes Everything Free

EVERYTHING-FREE CHOCOLATE CUPCAKES


Prep time: 15 min Cook time: 22 min Total time: 37 min

INGREDIENTS

cupcakes- everything

  • Cupcakes:
    1 cup (about 12) pitted Medjool Dates (Natural Delights)
    1 cup of Water
    1 cup of Oat Flour (if you have a Food Processor, you can make your own oat flour out of oat flakes)
    1/4 cup of Cacao Powder
    1 tbsp of Baking Powder
    1/4 cup non-dairy Milk
  • Frosting:
    1 cup pitted Medjool Dates (about 12)
    2/3 cup non-dairy Milk
    2 tbsp Cacao Powder

DIRECTIONS

  • Frosting:
    1. Add all the ingredients to a high-speed blender or emulsifier and blend on high until
    smooth.  Chill for at least 2 hours
  • Cupcakes:
    1. Preheat the oven to 350F
    2. In a food processor,combine the dates and water.  Process to form a paste
    3. Add the cacao power, baking powder, flour, and non-dairy milk.  Process to
    combine
    4. Alternatively, you could blend the dates, water, and non-dairy milk in a
    blender and mix it with the dry ingredients in a bowl if you don’t have a
    processor
    5. Spoon batter into 6 lined or oiled muffin tins.  Fill them 3/4 of the way, and
    smooth the tops
    6. Bake at 350F for approximately 22 minutes
    7. Remove from the pan and let them cool on a rack
    8. Once completely cool, frost with the chilled frosting
    9. Store frosted cupcakes in the fridge
