I’ve been so busy working at the computer that I needed something fast today that would keep me alert and energized while I get through my project. Eating clean isn’t difficult when you have the right ingredients cleaned and cut in your fridge. Make a plan, use a day to clean your veggies and have some cooked protein, boiled eggs or pumpkin seeds on hand. It would have been easy for me to run around the corner for take out but that would not serve me well. Summer fresh salad is easy for you to make so enjoy!
Arugula Greens Protein Salad
*Ingredients
Arugula and Field Greens (use what you have and as much as you want)
1/2 of a cucumber
1 carrot (sliced or shredded)
1 cooked beet (don’t used jarred they have added sugar)
1tbsp of Pumpkin seeds
fresh basil to taste
I added fresh green beans (they were from my Aunt’s garden)
Organic Goat’s Cheese (I don’t measure, use about the size of your index finger)
My protein was 2 hard boiled eggs
Dressing
Olive oil, rice vinegar, a bit of dijon and pepper (never measured)
Serve and Enjoy!
