For those of you who know me, you know I am all about quick and easy in my life.  With 3 kids, I need to be able to make healthy meals in a hurry.  Today I am booked solid with appointments back to back.  I needed a quick fix 10 minute Healthy Lunch.  Although I had thought about going out and getting a healthy salad with some protein, I reminded myself what I always tell my clients, “try and eat at home whenever possible”.  This is quick and easy and can be used for breakfast, lunch or dinner.

10 minute Healthy Lunch or Breakfast

It literally took me 10 minutes to make.  I barely had time to put the ingredients back in the fridge.

Ingredient list:

1tsp of Coconut oil for the pan (heat it)

1 full egg including the yolk and 4 egg whites

2 heaping tbsps of All Natural, no sugar salsa (I like Neal Brothers Organic Salsa – no additives)

1 piece of Ezekiel Whole Grain Sprouted Bread (so filling and a great carb!)

1 apple sliced

Cilantro to make it look fancy (I had it in the fridge and my kids love when I put stuff like that on the plate).

Option: goat’s cheese on top of the eggs and then salsa on top (although I did not do that today).

I use everything organic.  If organic is not in the budget, use non organic.  If possible by the free from organic eggs (no hormones).  Be sure there are no additives in the salsa (very important).
